Fried Oreo Cookies

This is the favorite dessert of my girls.  They absolutely love this.  The trick for me is hiding the Oreo cookies long enough from their father so we have enough cookies to make the dessert!!

Ingredients:
1 c buttermilk pancake mix
¾ c ice water
Oreo cookies (should be frozen for at least 3 hours)
2 T powdered sugar

Directions:
In a 3 quart saucepan preheat 1 quart vegetable oil or deep fryer to 350 degrees.  While oil is heating up, ensure you have a cookie sheet with paper towels ready for draining the grease.  In a medium bowl, stir water into the buttermilk pancake mix with a whisk until it is thoroughly combined.  Batter should be the consistency of a traditional pancake mix.  If not…then add more ice water and mix accordingly.  With metal tongs, dip each cookie one at a time into the batter as you want to ensure there is a thin coat completely covering the cookie.  Place the cookie carefully into the hot oil.  Repeat for each cookie.  You want to fry them on both sides while turning over one until golden brown.  Remove the fried cookie from the hot oil with the metal tongs and drain on the paper towels.  Dust with powdered sugar and let cool at least two minutes before serving.
