As You Like It Oven Omelet

This recipe became a family favorite over the holiday.  The current recipe makes six servings.  You can adjust it down (or up) depending upon how many you want to feed and/or how hungry you are.  The other great thing about this is you can add anything you want...veggies, meats, cheeses...have at it!!  This recipe is just the basic outline.

Christmas Breakfast Casserole

Ingredients:

8 eggs
1 c milk
2 c shredded frozen hashbrowns
1 c cooked ham or sausage
1 c shredded cheddar cheese
Salt & Pepper to taste

Directions:

Preheat oven to 350 degrees.  Lightly grease an 8x8 baking pan.  Beat eggs in large bowl.  Add milk.  Stir in the potatoes, ham, and cheese.  Add the salt & pepper.  Pour into pan and bake 45 to 50 minutes.  It is ready when you insert a knife into the mixture and it comes out clean.  You can add additional cheese to the top after cooking for 30 minutes.
