Coca Cola Sheet Cake



This is my favorite cake recipe as the cake is so moist and delicious.  And of course...it's easy!!  I don't always use the buttermilk, but I do have a can of powdered buttermilk I keep in the pantry.  Both work really well!  Also, I sometimes buy Mexican Coca Cola as it gives it a very good flavor as well.


Cake Ingredients:

1 c Coca Cola
1 stick of butter
1/2 c canola oil
3 T Ghirardelli Sweet Ground Chocolate and Cocoa
2 c sugar
2 c all purpose flour
1/2 tsp finely ground sea salt
2 extra large eggs
1/2 c buttermilk
1 tsp baking soda
1 tsp vanilla extract

Frosting Ingredients:

1 stick butter
3 T Ghirardelli Sweet Ground Chocolate and Cocoa
6 T heavy cream
1 tsp vanilla extract
1 lb box of confectioners sugar

Cake Directions:

Mix Coke, butter, cocoa, and oil to a slow boil in a large saucepan.  In a large bowl combine sugar, flour and salt.  Mix together and pour boiling mixture into the bowl.  Blend well with a hand mixer until smooth.  Add the eggs, buttermilk, vanilla, and baking soda and continue to blend well for at least five minutes.  Pour batter into a greased 9X13 Pyrex dish (spray with Pam first).  Bake for 30 minutes at 350 degrees.  Make sure the knife is clean to ensure it is done!

Frosting Directions:

Combine butter, cocoa, and heavy cream in a saucepan until the butter melts completely.  Beat in the vanilla extract and confectioners sugar with a hand mixer until smooth.  Spread frosting (you can pour it) over the hot cake.  Do not cut until it has cooled completely as everything needs to set.
