Grandma's Kisses

These cookies were my beloved grandma's secret weapon.  She would always make them when I came to visit.  She dubbed them Grandma's Kisses because they look like big white Hershey Kisses and Grandma makes them.  I tell my girls that they are Grandma's Kisses because Grandma sneaks in the middle of the night to kiss them so they will taste so good.

 Meringue cookies


Ingredients:
3 egg whites
Pinch of salt
1 c caster sugar
½ tsp vanilla
1 c milk chocolate chips
1 c chopped pecans

Directions for caster sugar:
Place sugar in your food processor and process until it is very fine.

Directions:
Separate the eggs when they are cool.  Once separated, cover the egg whites and let them come to room temperature before using…about 30 minutes.  Preheat oven to 350 degrees.  Beat the egg whites, vanilla, and salt together with a hand mixer.  Then slowly begin to add the caster sugar all the while mixing.  The mixture should be really stiff looking.  When done, fold in by hand the chocolate chips and nuts.  Line two cookie sheets with aluminum foil.  Place drops of mixture onto the sheet.  Place both cookie sheets in the oven.  Turn the oven off and let it “cook” overnight.  Cookies will be ready to remove from the oven the next day.
