Deliciously Simple Queso

There are so many different recipes out there...and while the easiest is Velveeta and Rotel, the best queso requires few ingredients, but needs to be big on taste.  So, my easy queso recipe is as follows:

 Queso Blanco Dip by lifetastesgood
1 eight ounce package of Velveeta cheese
1 small can Rotel tomatoes
1 package of HEB Quesadilla cheese (with or without jalapenos)
½ c cream
4 Serrano peppers, chopped finely
2 tsp Crazy Jane’s Mixed Up Salt
2 tsp McCormick’s Mediterranean Spiced Sea Salt

In a large saucepan, add the cheese, tomatoes, cream, peppers, and seasonings.  Continue stirring over medium heat until it is all melted.  Serve with really good tortilla chips.

Note:  If you don’t have a local HEB, just grab a package of quesadilla cheese (or Mexican white cheese).  If it doesn’t have jalapenos, you can add a small can of chopped jalapenos or green chilies to the pot.
