Southern Pulled Pork



I love this recipe!!  It is so very simple and tastes delicious.  Of course the trick is to use the finest ingredients!  Also, if you want it spicy...then add the jalapenos.  If not, then leave it out.


Ingredients:

1 3-5 pound pork roast (don't worry about the fat as we will get rid of it later)
2-3 cans of Dr. Pepper
1 large onion sliced
Really good barbeque dry rub
Jalapenos or chile pi-quin (optional)
Large jar of your favorite barbeque sauce (My favorite is Sweet Baby Ray's Barbecue Sauce in Hickory & Brown Sugar as it reminds me of barbeque from my childhood)


Directions:

Slice the onion and place it at the bottom of the crock pot.  Add the jalapenos as desired.  Take your dry rub and generously saturate the pork.  Place the pork with the fat side up over the onions.  Pour the soda over the pork.  You don't want it to entirely cover the pork...but you want it to cover 2/3 of it.  Sprinkle more rub over where the soda removed it.  Cook on low no more than 7 hours.  Take the pork out of the pot and let it drain.  Shred the pork in a bowl and then toss with your barbeque sauce to the desired coverage.  Serve with pickle slices.
