Ingredients:
1 ½ c corn meal
1 ½ c flour
1/3 c +1 T sugar
1 T baking powder
1 T baking soda
1 c plain yogurt
1/3 c +1 T creamed corn
1/3 cups +1 T frozen corn
1 ½ c buttermilk
3 eggs
1/3 c +1 T melted butter
¼ tsp salt
Directions:
Preheat oven to 400 degrees. In one bowl, mix all dry ingredients
together. Then in an even larger bowl, whisk all the wet ingredients together. Then add dry ingredients to form batter. Use a small pre-heated skillet, spray with Pam
and then fill with approximately 9 ounces of the batter. Bake for 16 minutes.
