Chicken Taco Soup

I just made this variation tonight as I adjusted a recipe I found online.  My family absolutely loved it.  I have to admit, it was delicious!!


1 lb chicken breasts
1 can black beans
1 can Bush's Mild Chili Beans
1 can chicken broth
1 can Low Sodium Corn
1 can Green Enchilada Sauce
1 can of Rotel
1 can Cream of Chicken Soup
1 large can green chilies
1 pkg of Taco Bell Taco Seasoning
Adobo Seasoning
shredded cheese
sour cream
Julio's Corn Tortilla Chips
Goya Olive Oil


Slice the chicken and place in a pan with olive oil.  Generously sprinkle your favorite Adobo seasoning on the chicken while cooking.  (As a short cut you can buy a pound of chicken fajita meat and just cook that in the olive oil. Omit the Adobo Seasoning.)

Once the chicken is cooked thoroughly, drain off any remaining oil.  Drain & rinse the black beans and corn.  Add to the pot with the chicken.  Add the remaining ingredients, except the cheese, sour cream, and chips.

Cook over medium heat until heated thoroughly.  Top each serving with shredded cheese, crushed chips, and sour cream.
