Southern Green Beans

This is my husbands favorite.  You can add a can of diced tomatoes to it, but he doesn't like it that way.  These have to cook overnight and are best when cooking for 10-12 hours.  Doing it this way is the very best way.


1 lb. fresh green beans
1/2 lb. center cut bacon
1 chopped onion
1/2 tsp. Crazy Jane's Mixed Up Salt
1 tsp. fresh ground pepper
Red Pepper Flakes (to taste)


Preheat oven to 225 degrees.  Clean and snap the green beans.  Chop the bacon and place it in a dutch oven on the stove over medium heat. Cook it thoroughly until it is crispy (8-10 minutes).  Take the bacon out, but leave the grease and cook the onion until translucent.  Add the red pepper flakes to your personal taste.  Then add the bacon back in and add the green beans and seasoning.  (This is the time to add the can of diced tomatoes, if you would like.)  Cover the beans with water.  Put the lid on and place it in the oven for 10-12 hours.
