Here is another family favorite and recipe Grandma always made. Now I make sure I do it every Christmas to ensure her memory is with us. (Of course, we also do her Egg Nog with the heavy handed whiskey and Bourbon Balls with the extra bourbon...)
Ingredients:
1 cup brown sugar
1/2 cup granulated sugar
1-1/2 cups corn syrup
1-1/2 cups creamy peanut butter
6 cups Special K Cereal
12 oz. pkg. milk chocolate chips
1 pkg butterscotch morsels
Directions:
In large saucepan, combine sugars and corn syrup and mix well. Cook over medium low heat until the mixture is bubbly. Add the peanut butter. Stir until mixture is smooth and combined. Add cereal and stir to coat. Pour and press into greased 13x9" pan, using back of greased spoon to press evenly. Place the pan in the refrigerator so it can cool completely.
Combine chocolate chips and butterscotch morsels in a double broiler. Heat over medium low heat until the mixture melts completely. Stir the entire time so nothing burns. When smooth, then spread over cereal mixture. Let cool completely, then cut into bars. Store, covered, at room temperature. Makes 36
