These cookies are Daddy's favorite and come from his mother's recipe box. He used to buy the jumbo can of Peter Pan Peanut Butter from Sam's. Then he would bring it home and ask me to start baking. Since this recipe only contains four ingredients, I always remembered it. But since I haven't lived at home for 18 years, I had forgotten until I came across it the other day. The trick to these cookies is not removing them from the cookie sheet until they cool completely. Otherwise you have a crumbly mess and you might as well get out the ice cream and blender and make a "blizzard."
Ingredients:
1 c creamy peanut butter
1 c sugar
1 egg
1 tsp vanilla
Directions:
Preheat oven to 350 degrees. Combine all ingredients until the mixture is smooth. Spray Baker's Joy nonstick spray onto the cookie sheet. Drop spoonfuls of the mixture onto the cookie sheet. Flatten the cookies with a fork to make the classic criss-cross pattern known for peanut butter cookies. Bake for 10 minutes. Do not overcook!! Let the cookies cool completely before removing with a spatula.
