Easy Chilaquiles

This is a family favorite and is so very easy and kid friendly.  It is best with the Taco Flavored Doritos, but the Nacho Cheese Doritos works well if you can't find the other.  Moreover, if you want to add more cheese...go ahead.  I always end up doing so as my family are cheeseholics.

 Chicken Chilaquiles

Ingredients:
1 bag Taco Flavored Doritos
3 c. shredded cheddar cheese (you can use Mexican, Colby Jack, or a mixture with Fontina)
2 cans cream of chicken soup (can use cheese soup)
1 can mild green chilies
1 can green enchilada sauce
1/2 to 3/4 pound shredded chicken

Directions:
Preheat oven to 350 degrees.  In a large 13 x 9 pyrex dish, place a layer of Doritos.  Mix in a bowl the soups, enchilada sauce and green chilies.  Over the first layer of Doritos, place a layer of shredded chicken.  Top with 1 cup of cheese. Pour 1/3 of the mixture over.  Repeat layers until all gone.  Bake for 30 minutes until cheese is melted and bubbly.

Helpful Hint:
As Kim Stevens pointed out in her blog, if you get the cooked whole chickens at the store (or at Costco for $4.99 each) and pick them off the bone, you can "save up" and freeze in easy to use portions.  Also if you take the carcasses and boil them with onion, celery, and seasonings you can have your own chicken broth to freeze as well.
