One Pot Spaghetti (aka Grown Up Spaghetti)

When I get a hankering for spaghetti, this is the recipe I use.  Because of the ingredients, my girls have dubbed it "Grown Up Spaghetti."  The recipe is for an electric pressure cooker.  If you don't have one, you really should get one as they are awesome!!  It's a God-send for our family as I can prepare a delicious meal in just minutes!!  However, you can make this recipe without a pressure cooker...you would use two pots.  Moreover, you wouldn't add the water either as that is specifically for the pressure cooker.  Just add a can of tomato paste and three tomato paste cans of water.  Simmer the mixture on the stove for 30 minutes to let the flavor come together.



Ingredients:
2 T olive oil
1 lb ground beef (as lean as you can get)
1 c chopped onion
1 clove garlic, mashed
2 8-oz cans tomato sauce
2 c Merlot wine (they do sell them individually in single servings)
1 c water
1 lb spaghetti, uncooked
1 1/2 tsp chili powder
3 tsp McCormack's Mediterranean Sea Salt
1/2 c freshly grated Parmesan or Parmesan Reggio

Directions:
Heat the pressure cooker and add the oil.  Lightly brown the ground beef, onion, and garlic.  Add remaining ingredients except the cheese.  Toss the uncooked past in the liquid so it separates.  (If the spaghetti is too long to fit in the pot, simply break the strands in half before adding).  Close cover securely.  Place pressure regulator on vent pipe and cook 7 minutes for well done spaghetti and 6 minutes for al dente.  Cool cooker immediately.  Stir cheese into mixture before serving.
