Seven Layer Salad

How I love this salad!!  Even my picky no vegetable family loves it too!!  This is great in the summer.  As a child Mom would serve it for dinner with rolls.  It's also great for barbeques.

 Seven Layer Salad

Ingredients:
Shred enough lettuce for a 13 x 9 Pyrex dish (about 1 head)
1 c Spanish onion, chopped
1 c chopped celery
1 c chopped green pepper
1 10 oz pkg frozen green peas, separated
1 pint mayonnaise
2 T sugar
8 strips thick bacon
2 c grated cheddar cheese

Directions:
Place the layers in the 13 x 9 Pyrex dish as follows...lettuce, onion, celery, green pepper, and peas.  Mix the mayonnaise with the sugar in a small bowl.  Spread this mixture on top of the peas ensuring you seal all the spaces.  (This keeps the veggies crisp and won't allow anything to wilt.)  Fry 8 strips of bacon until crisp and crumble over the mayonnaise mixture.  Top with the cheddar cheese.  Refrigerate overnight.
