Homemade Burritos with Queso

Authentic Burritos are so yummy.  I came up with this recipe and it works so well.  You can top it with chili...or a cheese sauce.  This cooks up in the oven in 20 minutes.  Needless to say my hubby was pleasantly surprised!!  The 8 inch tortillas make mini burritos and the 10 inch makes bigger burritos.

 Chile Colorado Burritos - mmmm

Ingredients for the Burrito:

1 lb ground beef
1 can seasoned pinto beans
4 cloves chopped garlic
1 small white onion
flour tortillas (either the 8 in or 10 in)
Pam cooking spray
1 pkg Taco Seasoning

Ingredients for the Cheese Sauce:

1/2 small box Velvetta
3/4 c milk
1 T Morton & Bassett Mexican Blend (or combine chili powder & cumin)

Directions:

For the Burrito:  Preheat oven to 375 degrees.  Cook ground beef; add garlic & onions when halfway done to finish cooking.  Add can of pinto beans.  Add taco seasoning packet and 3/4c water.  Cook it down to where you have it in a gravy like status.  Line a big cookie sheet with foil and spray with Pam.  Spoon mixture into the middle of the tortilla and fold.  Place fold side down on cookie sheet.  Continue until you have used up all the mixture.  Take the Pam cooking spray and ensure you coat the burritos. Place in the oven for 20 minutes

For the Cheese Sauce:  In a small saucepan, melt the Velvetta and milk until melted.  Add the seasoning. 

When the burritos are done, serve warm with the cheese sauce (or chili) on top. Garnish with green onions, sour cream, pico de gallo, guacamole, and salsa.
