Shrimp Salad

This recipe is really good.  I serve it in a tomato or half an avocado.  But, you can also toss it with cold pasta and add a splash (or two, or three) of Vodka or Tequila.

4 T. cream cheese (these come using the chive or a garlic blend would be good)
1/2 to 1 T. fresh lemon juice
2 stalks celery finely chopped
2 T. finely chopped onion
1 lb. large boiled shrimp, Chilled, dried, sliced lengthwise and then into 3-4 small chunks
Lots of lemon pepper to taste (Fiesta Brand makes a good one)

Mix lemon and cream cheese together, add all other ingredients and toss to mix. I start out with 1/2 T of lemon pepper and then added more after tasting.  However, some people like more lemon pepper, so keep the bottle on the table.  Lime Pepper is also good...just substitute the lime juice instead of Lemon Juice.  Also, you can add fresh dill.  The sky is the limit!!
