Sweet Potato Souflee

This is a conglomeration recipe from three different relatives.  I took the best of everything and combined it.  It took a couple of years to tweak...but here it is!

Ingredients:

1 40 oz. can yams
1 stick butter, melted
3 eggs
1 c sugar
1/2 c heavy whipping cream
1 1/2 T. vanilla extract
3/4 tsp. iodized sea salt

8 oz. pecan pieces
1/2 c cake flour
1/2 stick butter
1 c brown sugar

Directions:

The oven should be set at 400 degrees. Combine all the ingredients in red and mix well.  (I use my Ninja to do this quickly.)  Pour the mixture into a small baking dish (approximately 8").  You might want to spray lightly with Pam first.

Now it's time to work the remaining four items.  The 1/2 stick of butter should be soft enough to where you can chop it up. Put it in a bowl, and combine the cake flour, pecan pieces, and brown sugar.  Stir until mixed well.  Pour over yam mixture.

Bake for 10 minutes.  The last 10 minutes you can add marshmallows on top to melt.  If not, then just bake for 20 minutes.
